Ingredients
1 tbl ground flax seeds + 3 tbl water
150 g peanut butter (I used a crunchy one)
65 g brown sugar (coconut sugar works as well)
50 g oat flour (ground oats)
1 tsp baking powder
dash of salt
*if you’d like to use coconut sugar, the taste will be just as delicious, but the cookies will be slightly less chewy
Method

Preheat the oven to 180°C and prepare a baking tray.

Mix the finely ground flax seeds and water and let sit for about 5 minutes.

Add peanut butter, sugar and salt into a bowl and use a handheld mixer to mix together.

Mix the oat flour with the baking powder and add to the bowl. Mix together (dough will be crumbly).

Use your hands to make bowls with about 1 tbl of dough (balls about 2-2.5 cm ∅). Then slightly press them into thick mini burgers and put them onto the baking tray.

Bake for about 14 minutes (they will be soft).
Let them cool down for at least 30 minutes before eating as the cookies need some time to get that crunchy-soft consistency. Best consistency after a few hours 🙂
